Select "Settings" in the main menu:

Select "Point of Sale":

Select "Taxes"

Select the "+" in the top right corner to create a new tax:

Choose a name for the tax:

Choose it's %

Choose what things the tax applies to (products, services or both):

You can optionally add a business number for your tax that will show on customer receipts.

Then select "Save"
